INGREDIENTS
- Chicken Breast fillets 2
- Finely Grated zest and juice of limes 2
- Sugar 1, 1/2 tbsp
- Cayenne Pepper 1/2 tsp or to taste
- Dried Oregano 1, 1/2 tsp
- Onions 2 sliced
- Red bell pepper 1
- Capsicum 1
- Yellow bell pepper 1
- Coarsely ground black pepper
- Cinnamon powder 1/2 tsp
- Oil 2 tsp
2 METHOD
- Slice the chicken fillet in long thick strips.
- In a bowl marinate the chicken strips with the lime zest and juice, sugar, oregano, cayenne pepper and cinnamon.
- Mix well and leave aside for 30 minutes.
- Heat the oil in a pan stir fry the chicken for 5 to 6 minutes and then add the peppers and onions and cook for 3 to 4 minutes.
- Keep cooking it until chicken strips are cooked through and vegetables are tender yet juicy.
- Serve with tortillas and sour cream and salsa.
