CHICKEN FAJITAS

          
INGREDIENTS
  • Chicken Breast fillets 2
  • Finely Grated zest and juice of limes 2
  • Sugar 1, 1/2 tbsp
  • Cayenne Pepper 1/2 tsp or to taste
  • Dried Oregano 1, 1/2 tsp
  • Onions 2 sliced
  • Red bell pepper 1
  • Capsicum 1
  • Yellow bell pepper 1
  • Coarsely ground black pepper
  • Cinnamon powder 1/2 tsp
  • Oil 2 tsp
2   METHOD

  1. Slice the chicken fillet in long thick strips.
  2. In a bowl marinate the chicken strips with the lime zest and juice, sugar, oregano, cayenne pepper and cinnamon.
  3. Mix well and leave aside for 30 minutes.
  4. Heat the oil in a pan stir fry the chicken for 5 to 6 minutes and then add the peppers and onions and cook for 3 to 4 minutes.
  5. Keep cooking it until chicken strips are cooked through and vegetables are tender yet juicy.
  6. Serve with tortillas and sour cream and salsa.
